Ingredients

  • 2 cups strawberries
  • 2 cups blueberries
  • 2 cups raspberries
  • 0.5 cups granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup rolled oats
  • 0.5 cups all-purpose flour
  • 0.5 cups brown sugar
  • 0.5 teaspoons ground cinnamon
  • 0.5 cups unsalted butter
  • 0.25 teaspoons salt

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease an 8x8-inch baking dish and set aside.

Step 2

Wash and gently pat dry the strawberries, blueberries, and raspberries. Remove the green tops from the strawberries and slice them into quarters.

Step 3

In a large mixing bowl, combine the strawberries, blueberries, and raspberries with the granulated sugar, cornstarch, vanilla extract, and lemon juice. Toss gently until the fruit is evenly coated. Transfer the mixture to the prepared baking dish.

Step 4

In another mixing bowl, prepare the topping. Combine the rolled oats, flour, brown sugar, cinnamon, and salt. Stir to mix well.

Step 5

Cut the unsalted butter into small cubes. Add the butter to the oat mixture and use your fingers or a pastry cutter to work it into the dry ingredients until the mixture looks like coarse crumbs.

Step 6

Sprinkle the topping evenly over the berry mixture in the baking dish.

Step 7

Place the dish in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the berries are bubbling.

Step 8

Remove the crisp from the oven and let it cool for 10 minutes before serving.

Step 9

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
