Ingredients

  • 450 grams fresh green beans
  • 2 medium shallots
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 cup sliced almonds
  • 1 large lemon
  • 2 large garlic cloves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Trim the ends of the green beans and rinse them under cold water. Set aside.

Step 2

Peel and thinly slice the shallots. Set aside.

Step 3

Zest the lemon and then cut it in half, reserving the zest and juice separately.

Step 4

Peel and finely mince the garlic cloves.

Step 5

Bring a large pot of salted water to a boil. Add the green beans and blanch them for 3 minutes until tender but still crisp. Drain immediately and transfer to a bowl of ice water to halt cooking. Once cooled, drain again and pat dry.

In a large skillet, melt 1 tablespoon of butter with 1 tablespoon of olive oil over medium heat. Add the sliced shallots and cook, stirring occasionally, until they are golden and crispy, about 5-7 minutes. Remove the shallots from the pan and place them on a paper towel-lined plate to drain.
