Ingredients

  • 1 medium (peeled and quartered) Onion
  • 2 large Garlic clove
  • 2 medium (peeled and chopped) Carrot
  • 2 chopped Celery sticks
  • 1 medium (chopped) Zucchini
  • 1 medium (peeled and diced) Potato
  • 30 g Olive oil
  • 400 g Canned diced tomatoes
  • 1000 g Vegetable stock
  • 400 g (rinsed and drained) Canned cannellini beans
  • 100 g (e.g., ditalini, orzo) Small pasta
  • 50 g Baby spinach
  • 10 g (chopped) Fresh parsley
  • 1 tsp (to taste) Salt
  • 0.5 tsp (to taste) Black pepper
  • 40 g Grated Parmesan (optional, for serving)

Directions

Step 1

Place the onion, garlic, carrot, and celery into the Thermomix bowl. Chop for 5 seconds on Speed 5.

Step 2

Scrape down the sides of the bowl. Add the olive oil and sauté for 3 minutes at 120°C on Speed 1.

Step 3

Add the zucchini, potato, canned diced tomatoes, and vegetable stock. Cook for 15 minutes at 100°C on Speed 1, Reverse.

Step 4

Insert the simmering basket into the Thermomix lid to prevent splashes. Add the cannellini beans and pasta to the bowl, then cook for 10 minutes at 100°C on Speed 1, Reverse.

Step 5

Check that the pasta is cooked. If not, cook for an additional 2-3 minutes at 100°C on Speed 1, Reverse.

Step 6

Add the baby spinach, parsley, salt, and pepper to the bowl. Mix for 10 seconds on Speed 1, Reverse, to wilt the spinach and combine the flavors.

Step 7

Taste and adjust seasoning if necessary. Serve hot, garnished with grated Parmesan if desired.
