Ingredients

  • 120 g Unsalted butter (softened)
  • 120 g Caster sugar
  • 2 large Eggs
  • 180 g Self-raising flour
  • 1 tsp Ground cinnamon
  • 60 ml Milk
  • 2 medium Green apples (peeled, cored, and thinly sliced)
  • 1 tbsp Raw sugar
  • 0.5 tsp Ground cinnamon (for topping)

Directions

Step 1

Preheat the oven to 170°C (340°F) and line a 20cm (8-inch) round cake tin with baking paper.

Step 2

Add the softened butter and caster sugar to the Thermomix bowl. Mix 30 seconds on Speed 4, scraping down the sides as needed, until light and fluffy.

Step 3

Insert the butterfly whisk. Add the eggs to the Thermomix bowl and mix for 30 seconds on Speed 4 until well incorporated. Remove the butterfly whisk.

Step 4

Add the self-raising flour, ground cinnamon, and milk to the bowl. Mix for 20 seconds on Speed 4 until a smooth batter forms, scraping down the sides halfway if necessary.

Step 5

Pour the batter into the prepared cake tin and smooth the top with a spatula.

Step 6

Arrange the thinly sliced apples in overlapping circles on top of the batter.

Step 7

In a small bowl, mix the raw sugar and ground cinnamon for the topping. Sprinkle this mixture evenly over the apples.

Step 8

Bake in the preheated oven for 40-45 minutes or until a skewer inserted into the center comes out clean.

Step 9

Allow the cake to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.

Step 10

Serve warm or at room temperature with a dollop of cream or a dusting of icing sugar, if desired.
