Ingredients

  • 2 pounds Ground beef
  • 1 large Yellow onion, diced
  • 4 cloves Garlic, minced
  • 28 ounces Canned diced tomatoes, with juice
  • 15 ounces Canned tomato sauce
  • 15 ounces Canned kidney beans, drained and rinsed
  • 15 ounces Canned black beans, drained and rinsed
  • 15 ounces Canned pinto beans, drained and rinsed
  • 1 medium Green bell pepper, diced
  • 1 medium Red bell pepper, diced
  • 2 tablespoons Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Cayenne pepper (optional)
  • 1 cup Beef broth
  • 1 tablespoon Olive oil (for browning meat)

Directions

Step 1

Heat a large skillet over medium heat and add the olive oil.

Add the ground beef to the skillet and cook until browned, breaking it into small pieces with a wooden spoon. This should take about 7–10 minutes.

Remove the browned beef from the skillet and drain any excess grease. Transfer the beef to the Crock-Pot.
