Ingredients

  • 1.75 cups All-purpose flour
  • 2 cups Granulated sugar
  • 0.75 cup Unsweetened cocoa powder
  • 1.5 teaspoons Baking powder
  • 1.5 teaspoons Baking soda
  • 1 teaspoon Salt
  • 2 large Eggs
  • 1 cup Whole milk
  • 0.5 cup Vegetable oil
  • 2 teaspoons Vanilla extract
  • 1 cup Boiling water
  • 1 cup Unsalted butter
  • 3.5 cups Powdered sugar
  • 0.25 cup Heavy cream
  • 4 ounces Semi-sweet chocolate chips (melted)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and dust them with cocoa powder, then set aside.

Step 2

In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.

Step 3

Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes, scraping the sides of the bowl as needed.

Step 4

Carefully stir in the boiling water until the batter is thin and smooth. Do not overmix.

Step 5

Pour the batter evenly into the prepared cake pans. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Step 6

Remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then, invert them onto wire racks to cool completely.

Step 7

To make the frosting, beat the butter in a large bowl using an electric mixer on medium speed until creamy.

Step 8

Gradually add the powdered sugar, 1 cup at a time, mixing well after each addition.

Step 9

Add the melted chocolate and heavy cream to the butter mixture. Beat until the frosting is smooth and fluffy.

Step 10

Place one cooled cake layer on a serving plate. Spread a thick layer of frosting on top.

Step 11

Place the second cake layer over the first, and frost the top and sides of the cake evenly.

Step 12

Decorate as desired and refrigerate for 30 minutes to set the frosting before serving. Enjoy!
