Ingredients

  • 2 sheets Puff pastry sheets
  • 400 grams Chicken breast
  • 2 tablespoons Olive oil
  • 1 medium, diced Onion
  • 2 minced Garlic cloves
  • 1 medium, diced Carrot
  • 100 grams Frozen peas
  • 100 grams, diced Cremini mushrooms
  • 125 ml Heavy cream
  • 125 ml Chicken broth
  • 1 teaspoon Fresh thyme leaves
  • 1 teaspoon (or to taste) Salt
  • 0.5 teaspoon (or to taste) Black pepper
  • 1 large, lightly beaten Egg
  • 1 tablespoon (for dusting) All-purpose flour

Directions

Step 1

Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.

Step 3

Add the minced garlic and cook for another 30 seconds until fragrant.

Step 4

Add the diced chicken breast to the skillet. Cook until the chicken is no longer pink, about 5-6 minutes.

Step 5

Stir in the diced carrots, cremini mushrooms, and peas. Cook for another 5 minutes, stirring occasionally.

Step 6

Pour in the chicken broth and heavy cream. Add the fresh thyme leaves, salt, and black pepper. Simmer for 5-7 minutes, stirring frequently, until the mixture thickens slightly. Remove from heat and let it cool slightly.

Step 7

On a lightly floured surface, roll out the puff pastry sheets. Cut each sheet into 4 equal squares.

Place a generous spoonful of the chicken filling in the center of 4 of the pastry squares. Leave a small border around the edges.

Brush the edges of the filling squares with beaten egg. Place the remaining 4 squares on top, pressing the edges down to seal. Use a fork to crimp and reinforce the edges.

Carefully transfer the sealed parcels to the prepared baking tray. Poke a small slit on top of each parcel to allow steam to escape.

Brush the tops with the remaining beaten egg for a golden finish.

Bake in the preheated oven for 20-25 minutes, or until the pastry is puffed and golden brown.
