Ingredients

  • 2 lbs Cornmeal
  • 8 cups Granulated Sugar
  • 5 gallons Distilled Water
  • 2 tbsp Yeast (distiller's or baker's)
  • 1.5 lbs Malted Barley

Directions

Step 1

1. Combine the cornmeal and malted barley in a large stockpot.

2. Heat 4 gallons of distilled water to around 165°F (74°C) and pour it over the dry ingredients in the stockpot.

3. Stir the mixture thoroughly to eliminate any clumps. Let it sit for about 90 minutes, maintaining the temperature around 150°F (65°C) to extract fermentable sugars.

4. After the mixture cools down to 70-80°F (21-27°C), transfer it to a fermentation bucket or container.

5. Dissolve the sugar in 1 gallon of warm distilled water and add it to the fermentation container.

6. Sprinkle the yeast over the top of the liquid. Stir gently to incorporate.

7. Seal the fermentation container with an airlock and keep it in a warm, dark place (70-75°F or 21-24°C). Allow fermentation to occur for 5-7 days or until bubbling ceases.
