Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt
  • 0.75 cup Granulated sugar
  • 0.25 cup Brown sugar, packed
  • 0.5 cup Unsalted butter, melted and cooled
  • 2 units Large eggs
  • 1 teaspoon Vanilla extract
  • 1 cup Grated carrots
  • 1 cup Grated apple (peeled and cored)
  • 0.5 cup Milk
  • 0.5 cup Chopped walnuts (optional)
  • 0.5 cup Raisins (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease each cup.

Step 2

In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

Step 3

In another bowl, combine the granulated sugar, brown sugar, melted butter, eggs, and vanilla extract. Whisk until smooth.

Step 4

Gradually fold the wet ingredients into the dry ingredients, mixing just until combined. Be careful not to overmix.

Step 5

Gently fold in the grated carrots, grated apple, and milk until evenly distributed. If using walnuts or raisins, gently fold them in at this stage.

Step 6

Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the tin for about 5 minutes. Then transfer them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Store leftovers in an airtight container for up to 3 days or freeze for longer storage.
