Ingredients

  • 2 cups all-purpose flour
  • 0.5 cups granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 0.5 teaspoons salt
  • 0.5 cups butter (melted)
  • 1 cup plain yogurt
  • 1 teaspoon vanilla extract
  • 2 pieces large eggs
  • 0.25 cups dried cranberries
  • 0.25 cups chopped walnuts
  • 2 tablespoons sunflower seeds
  • 0.25 cups shredded cheddar cheese
  • 0.25 cups chocolate chips
  • 0.25 cups shredded carrot

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it lightly.

Step 2

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Step 3

In another bowl, whisk together the melted butter, yogurt, vanilla extract, and eggs until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; the batter should be slightly lumpy.

Step 5

Fold in the dried cranberries, chopped walnuts, sunflower seeds, shredded cheddar cheese, chocolate chips, and shredded carrot. Make sure the mix-ins are evenly distributed.

Step 6

Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Store leftovers in an airtight container at room temperature for up to 3 days or freeze for longer storage.
