Ingredients

  • 4 pieces large eggs
  • 2 tablespoons whole milk
  • 2 tablespoons unsalted butter
  • 4 slices thick-cut bacon
  • 2 slices sourdough bread
  • 1 whole avocado
  • 1 teaspoon lemon juice
  • 1 cup strawberries
  • 2 tablespoons maple syrup
  • 1 teaspoon vegetable oil
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Place the bacon slices in a cold skillet without overlapping them. Turn the heat to medium and cook for 4-5 minutes on each side until crispy. Transfer the cooked bacon to a plate lined with paper towels to drain the excess grease.

Step 2

While the bacon is cooking, mash the avocado in a small bowl. Add the lemon juice, salt, and black pepper, then mix well. Set aside.

Step 3

Heat 1 teaspoon of vegetable oil in a clean skillet over medium heat. Crack the eggs into a bowl, add milk and a pinch of salt, and whisk until fully combined. Pour the eggs into the skillet and gently scramble them. Cook, stirring frequently, for about 3-4 minutes until fluffy. Remove from the skillet and set aside.

Step 4

Toast the sourdough bread in a toaster or on a grill pan until golden brown. Spread the mashed avocado mixture evenly over each slice of toast.

Step 5

In a small saucepan, heat the strawberries and maple syrup over low heat for 2-3 minutes, stirring frequently, until the strawberries are saucy but still retain their shape. Remove from heat.

Step 6

To plate, place the avocado toast and scrambled eggs on each plate. Add 2 slices of bacon to each plate and a generous spoonful of strawberries with syrup on the side.

Step 7

Serve immediately and enjoy this delicious, well-rounded breakfast feast!
