Ingredients

  • 4 slices sourdough bread
  • 8 ounces roast beef
  • 2 slices provolone cheese
  • 2 tablespoons horseradish sauce
  • 2 tablespoons mayonnaise
  • 1 cup baby arugula
  • 1 medium (sliced) tomato
  • 4 thin slices red onion
  • 2 tablespoons butter
  • 1 pinch kosher salt
  • 1 pinch black pepper

Directions

Step 1

Preheat a skillet or griddle over medium heat.

Step 2

Spread butter evenly on one side of each slice of sourdough bread.

Step 3

Place two slices of bread, buttered side down, onto the skillet.

Step 4

Top each slice with 4 ounces of roast beef and a slice of provolone cheese.

Step 5

In a small bowl, mix together the mayonnaise and horseradish sauce. Spread the mixture on the unbuttered sides of the remaining bread slices.

Step 6

Once the cheese starts to melt and the bottom bread slices are golden brown (about 2–3 minutes), place the bread with the horseradish mixture on top, unbuttered side facing in.

Step 7

Carefully flip the sandwiches and cook for an additional 2 minutes, until the bread is golden brown and the cheese is fully melted.

Step 8

Remove sandwiches from heat and carefully open them up. Add a layer of baby arugula, tomato slices, and red onion slices. Sprinkle with a pinch of kosher salt and black pepper.

Step 9

Close the sandwiches, slice in half, and serve warm.
