Ingredients

  • 12 oz rotini pasta
  • 1.5 cups cherry tomatoes
  • 1 medium-sized cucumber
  • 1 red bell pepper

  • 0.75 cups black olives
  • 0.75 cups feta cheese

  • 0.25 cups extra-virgin olive oil

  • 2 tbsp lemon juice
  • 2 cloves garlic
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the rotini pasta according to the package instructions until al dente. Drain the pasta and rinse under cold water to cool it down and stop the cooking process. Set aside.

While the pasta cooks, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber, and chop the red bell pepper into small pieces. Thinly slice the red onion and roughly chop the parsley.
