Ingredients

  • 8 pounds bone-in spiral-cut ham
  • 1 cup brown sugar
  • 0.5 cup honey
  • 3 tablespoons Dijon mustard
  • 0.5 cup orange juice
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground cloves
  • 0.5 teaspoon ground ginger
  • 15 pieces whole cloves
  • 8 pieces pineapple rings (optional)
  • 8 pieces maraschino cherries (optional)

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Remove the ham from its packaging and place it cut-side down in a large roasting pan. Lightly score the surface of the ham with a sharp knife in a diamond pattern, about 1/4-inch deep.

Step 3

If desired, stud the scored surface with whole cloves, inserting them at the intersections of the diamond pattern.

Step 4

In a medium saucepan, combine the brown sugar, honey, Dijon mustard, orange juice, ground cinnamon, ground cloves, and ground ginger. Heat over medium heat, stirring constantly, until the mixture is smooth and bubbling. Remove from heat.

Brush about 1/3 of the glaze over the ham, making sure to cover all surfaces.

Cover the ham loosely with aluminum foil and bake in the preheated oven for 1 hour.

After 1 hour, remove the foil and brush the ham with another 1/3 of the glaze. If using pineapple rings, secure them to the ham with toothpicks and place a maraschino cherry in the center of each ring.

Continue baking the ham uncovered for an additional 30–45 minutes, occasionally basting with the remaining glaze, until the ham reaches an internal temperature of 140°F (60°C).

Once cooked, remove the ham from the oven and let it rest for 10–15 minutes before slicing.
