  • 900 grams fresh green beans (trimmed)
  • 2 pieces large shallots (thinly sliced)

  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.25 cup slivered almonds (optional)
  • 2 liters water (for blanching)
  • 500 grams ice (for ice bath)

Directions

Step 1

Fill a large pot with 2 liters of water and bring it to a boil. Add a tablespoon of salt to the water.

While waiting for the water to boil, trim the ends off the green beans and prep the shallots, garlic, lemon juice, and lemon zest.

Step 3

Once the water is boiling, add the green beans and blanch them for 3-4 minutes, until they are bright green and tender-crisp.

Prepare a large bowl with ice water. Transfer the green beans immediately into the ice water to stop the cooking process and preserve their color. After 3 minutes, drain and set aside.
