Ingredients

  • 2 cans (5 oz each) canned tuna
  • 0.5 cup panko breadcrumbs
  • 1 large egg
  • 2 stalks, finely chopped green onion
  • 2 tablespoons, finely chopped fresh cilantro
  • 2 cloves, minced garlic
  • 1 teaspoon, grated ginger
  • 1 tablespoon Thai red curry paste
  • 1 tablespoon lime juice
  • 1 tablespoon soy sauce
  • 3 tablespoons for frying vegetable oil
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Drain the canned tuna thoroughly and place it in a large mixing bowl.

Step 2

Add panko breadcrumbs, egg, green onion, cilantro, garlic, ginger, Thai red curry paste, lime juice, soy sauce, salt, and black pepper to the bowl.

Step 3

Mix all the ingredients together until fully combined and the mixture holds together. If the mixture feels too wet, add a little more panko breadcrumbs.

Step 4

Using your hands, form the mixture into 8 small patties (about 2-3 inches in diameter).

Step 5

Heat the vegetable oil in a large skillet over medium heat.

Step 6

Once the oil is hot, carefully add the patties to the skillet in a single layer, being careful not to overcrowd the pan.

Step 7

Cook the patties for 3-4 minutes on each side, or until golden brown and crispy.

Step 8

Remove the patties from the skillet and place them on a paper towel-lined plate to drain any excess oil.

Step 9

Serve the patties hot with a side of sweet chili sauce, lime wedges, or your favorite dipping sauce.
