Ingredients

  • 300 grams firm tofu
  • 3 tablespoons vegetable oil
  • 0.5 medium-sized red onion
  • 12 cherry tomatoes
  • 0.5 medium-sized cucumber
  • 2 tablespoons fresh cilantro
  • 2 tablespoons fresh mint leaves
  • 2 tablespoons roasted peanuts
  • 3 tablespoons lime juice
  • 2 tablespoons soy sauce
  • 1 teaspoon palm sugar or brown sugar
  • 1 bird's eye chili (optional)
  • 1 clove garlic

Directions

Step 1

Press the tofu for 15 minutes to remove excess water, then cut it into bite-sized cubes.

Step 2

Heat the vegetable oil in a non-stick pan over medium heat. Fry the tofu cubes until they are golden brown and crispy on all sides, about 5-7 minutes. Remove and set aside to cool.

Slice the red onion thinly and chop the cherry tomatoes into halves. Slice the cucumber into half-moons. Roughly chop the cilantro and mint leaves.
