Ingredients

  • 300 grams Sweet corn kernels (fresh or thawed from frozen)
  • 100 grams All-purpose flour
  • 50 grams Rice flour
  • 1 large Egg
  • 120 ml Coconut milk
  • 1 tablespoon Red curry paste
  • 1 teaspoon Fish sauce
  • 1 teaspoon Sugar
  • 3 leaves Lime leaves (finely chopped)
  • 2 tablespoons Cilantro (chopped)
  • 1 stalk Green onion (thinly sliced)
  • 500 ml Vegetable oil (for frying)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour and rice flour. Stir to combine.

In a separate bowl, whisk together the egg, coconut milk, red curry paste, fish sauce, and sugar until smooth.

Pour the wet ingredients into the dry ingredients and mix until a smooth batter forms.
