Ingredients

  • 1 lb Ground chicken
  • 0.5 cup Panko breadcrumbs
  • 0.25 cup Fresh cilantro, chopped
  • 2 Green onions, finely sliced
  • 2 cloves Garlic, minced
  • 1 tbsp Fresh ginger, grated
  • 1.5 tbsp Red curry paste
  • 1 tbsp Fish sauce
  • 1 tbsp Soy sauce
  • 1 tsp Sesame oil
  • 0.25 cup Peanut butter
  • 2 tbsp Coconut milk
  • 1 tbsp Lime juice
  • 1 tsp Toasted sesame seeds
  • 4 Burger buns
  • 4 Lettuce leaves
  • 0.5 cup Sliced cucumber
  • 0 to taste Sriracha (optional)

Directions

Step 1

In a large bowl, combine ground chicken, panko breadcrumbs, chopped cilantro, green onions, minced garlic, grated ginger, red curry paste, fish sauce, soy sauce, and sesame oil. Mix thoroughly until evenly combined.

Step 2

Shape the mixture into 4 equal patties and set them aside on a plate.

Step 3

Heat a grill or stovetop grill pan over medium heat. Lightly oil the surface to prevent sticking.

Step 4

Grill the patties for 4-5 minutes per side, or until fully cooked through and the internal temperature reaches 165°F (74°C). Remove from the grill and let them rest for a minute.

Step 5

While the burgers are cooking, prepare the peanut sauce. In a small bowl, mix peanut butter, coconut milk, lime juice, and toasted sesame seeds until smooth. Adjust the consistency by adding a splash of water if needed.

Step 6

Toast the burger buns lightly on the grill or in a toaster.

Step 7

Assemble the burgers by placing a lettuce leaf on the bottom of each bun, followed by a grilled patty. Drizzle with peanut sauce and add cucumber slices. Optionally, add a dash of sriracha for extra spice.

Step 8

Top with the other half of the bun and serve immediately.
