Ingredients

Directions

Step 1

Prepare the aromatics by lightly bruising the lemongrass stalks with the back of a knife, tearing the kaffir lime leaves slightly to release their aroma, and cutting the galangal, garlic, and shallots into thin slices.

In a small saucepan, pour the neutral cooking oil and heat it over low-medium heat. Avoid overheating the oil to prevent burning the aromatics.

Add the sliced galangal, lemongrass, kaffir lime leaves, garlic, shallots, and Thai bird's eye chilies to the oil.
