Ingredients

  • 200 grams Rice noodles
  • 200 grams Shrimp (peeled and deveined)
  • 150 grams Squid (sliced into rings)
  • 12 pieces Mussels (cleaned)
  • 2 tablespoons Vegetable oil
  • 3 cloves Garlic (minced)
  • 1 piece Red chili (sliced)
  • 2 pieces Eggs (beaten)
  • 1 cup Bean sprouts
  • 2 stalks Green onions (chopped)
  • 3 tablespoons Fish sauce
  • 2 tablespoons Soy sauce
  • 1 tablespoon Oyster sauce
  • 1 tablespoon Lime juice
  • 1 teaspoon Brown sugar
  • 2 tablespoons Cilantro (chopped)
  • 2 tablespoons Crushed peanuts
  • 4 pieces Lime wedges

Directions

Step 1

Soak the rice noodles in warm water for 10-15 minutes, or according to package instructions, until softened. Drain and set aside.

Step 2

Heat the vegetable oil in a large wok or skillet over medium-high heat.

Add the minced garlic and sliced red chili to the pan and stir-fry for about 30 seconds until fragrant.

Add the shrimp, squid, and mussels to the pan. Stir-fry for 2-3 minutes or until the seafood is just cooked through. Remove the seafood from the pan and set aside.
