Ingredients

  • 1 cup Jasmine rice
  • 1.5 cups Water
  • 500 grams Ground pork or chicken
  • 2 tablespoons Vegetable oil
  • 3 Garlic cloves, minced
  • 1 Red chili, finely chopped
  • 3 tablespoons Soy sauce
  • 2 tablespoons Fish sauce
  • 1 teaspoon Brown sugar
  • 1 tablespoon Lime juice
  • 10 Fresh basil leaves
  • 2 Scallions, thinly sliced
  • 1 Cucumber, sliced (for serving, optional)

Directions

Step 1

Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine 1 cup of jasmine rice with 1.5 cups of water. Bring to a boil, reduce the heat to low, cover, and cook for 15 minutes or until the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork before serving.

Step 2

Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium heat. Add the minced garlic and red chili, cooking for 30 seconds or until fragrant.

Step 3

Add the ground pork or chicken to the skillet. Cook, breaking it up with a spoon, for 5-7 minutes or until no pink remains.

Step 4

Stir in the soy sauce, fish sauce, and brown sugar. Cook for another 2-3 minutes, stirring well to coat the meat in the sauce.

Step 5

Turn off the heat and stir in the lime juice and fresh basil leaves, allowing the basil to wilt slightly.

Step 6

Serve the Thai mince over the prepared jasmine rice, garnished with sliced scallions. Add cucumber slices on the side if desired.
