  • 8 whole Green chilies
  • 2 whole Lemongrass stalks
  • 3 whole Shallots
  • 4 whole Garlic cloves
  • 1 inch Ginger (or galangal)
  • 4 whole Kaffir lime leaves
  • 0.5 cup Cilantro stems
  • 1 teaspoon Coriander seeds
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Ground white pepper
  • 1 teaspoon Salt
  • 1 tablespoon Fish sauce
  • 1 tablespoon Lime juice
  • 2 tablespoons Vegetable oil

Directions

Step 1

Start by preparing your ingredients: trim the lemongrass stalks, removing the tough outer layers, and finely chop the tender insides. Peel and roughly chop the shallots, garlic, and ginger (or galangal).

Step 2

Dry-toast the coriander seeds and cumin seeds in a small skillet over medium heat for about 1-2 minutes, stirring frequently, until fragrant. Allow to cool slightly, then grind into a fine powder using a mortar and pestle or spice grinder.

Combine the green chilies, lemongrass, shallots, garlic, ginger (or galangal), kaffir lime leaves, cilantro stems, ground coriander and cumin, ground white pepper, and salt in a food processor or blender.
