Ingredients

  • 2 medium Green apples
  • 1 medium Carrot
  • 0.5 medium Red bell pepper
  • 2 tablespoons Fresh cilantro
  • 2 tablespoons Fresh mint leaves
  • 3 tablespoons Roasted peanuts
  • 2 stalks Green onion
  • 1 small Thai bird’s eye chili
  • 3 tablespoons Lime juice
  • 2 tablespoons Fish sauce
  • 1 tablespoon Palm sugar
  • 1 clove Garlic

Directions

Step 1

Wash and dry the green apples. Core and julienne them into thin matchstick-like strips.

Step 2

Peel the carrot and julienne it as well. Set aside with the apples.

Step 3

Thinly slice the red bell pepper into strips and chop the green onion into small pieces.

Coarsely chop the roasted peanuts and set them aside for topping.

Finely chop the fresh cilantro and mint leaves. Additionally, thinly slice the Thai bird’s eye chili (adjust to taste).
