Ingredients

  • 4 pieces white fish fillets (such as cod, tilapia, or halibut)

  • 1 teaspoon brown sugar
  • 1 teaspoon fresh ginger, grated
  • 2 pieces garlic cloves, minced
  • 1 piece red chili, finely sliced
  • 2 pieces green onion, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • 1 piece lemongrass stalk, finely sliced
  • 4 tablespoons coconut milk
  • 1 piece carrot, julienned
  • 1 piece red bell pepper, thinly sliced
  • 4 sheets parchment paper or aluminum foil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a small bowl, mix together the soy sauce, lime juice, fish sauce, brown sugar, grated ginger, and minced garlic to create the marinade.

Lay out 4 sheets of parchment paper or aluminum foil, each about 12 inches long.

Place one fish fillet in the center of each sheet and drizzle 1 tablespoon of the marinade over each piece. Spread the marinade evenly to coat the fish.
