Ingredients

  • 4 pieces Thai bird's eye chilies
  • 3 pieces Roma tomatoes
  • 1 medium Red bell pepper
  • 2 pieces Shallots
  • 2 pieces Garlic cloves
  • 0.5 cups Fresh cilantro
  • 0.25 cups Fresh mint leaves
  • 2 tablespoons Lime juice
  • 1 teaspoon Fish sauce
  • 1 teaspoon Granulated sugar
  • 0.5 teaspoon Salt
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat a skillet or grill pan over medium heat.

Step 2

Roast the Roma tomatoes, red bell pepper, shallots, and garlic cloves in the skillet, turning occasionally until they are slightly charred and softened, about 5 minutes. Set aside to cool.

Step 3

Wearing gloves, finely chop the Thai bird’s eye chilies and set them aside.

Step 4

Once the roasted vegetables are cool enough to handle, peel the garlic cloves and roughly chop the tomatoes, red bell pepper, and shallots.

Step 5

In a food processor, combine the roasted vegetables, chopped Thai bird’s eye chilies, fresh cilantro, fresh mint leaves, lime juice, fish sauce, granulated sugar, salt, and olive oil.

Step 6

Pulse the mixture until it reaches your desired consistency. For a chunkier salsa, pulse a few times. For a smoother salsa, process longer.

Step 7

Taste and adjust seasoning with additional salt, lime juice, or sugar, if necessary.

Step 8

Transfer the salsa to a serving bowl and let it rest for at least 15 minutes to allow the flavors to meld.

Step 9

Serve with tortilla chips, as a topping for tacos, or alongside grilled meats and seafood.
