Ingredients

  • 1 cup Glutinous rice flour
  • 2 tablespoons Pumpkin puree (optional, for coloring)
  • 2 tablespoons Taro puree (optional, for coloring)
  • 0.5 cup Water
  • 2 cups Coconut milk
  • 0.5 cup Palm sugar
  • 0.25 teaspoons Salt
  • 2 pieces Pandan leaves (tied into a knot, optional for aroma)

Directions

Step 1

In a mixing bowl, combine the glutinous rice flour with small amounts of water until it forms a soft and pliable dough. Optionally divide the dough into portions and mix in pumpkin puree or taro puree to create colored dough.

Step 2

Roll the dough into small marble-sized balls (about 1/2 inch in diameter). Set aside on a tray lightly dusted with excess flour to prevent sticking.

Step 3

Bring a medium pot of water to a boil. Drop the dough balls into the boiling water a few at a time, stirring occasionally to prevent sticking.

Step 4

Cook the dumplings until they float to the surface, about 2-3 minutes. Once cooked, use a slotted spoon to transfer them into a bowl of cold water to cool and set their texture.

Step 5

In another pot, combine the coconut milk, palm sugar, salt, and pandan leaves. Gently simmer over low heat, stirring until the sugar dissolves. Do not let the coconut milk boil to avoid curdling.

Step 6

Drain the cooked dumplings and add them to the simmering coconut milk. Cook for another 2-3 minutes to let the flavors meld.

Step 7

Remove the pandan leaves and serve the dessert soup warm in bowls. Optionally garnish with shredded coconut or sesame seeds.
