Ingredients

  • 4 pieces Chicken thighs (boneless, skinless)
  • 4 cloves Garlic cloves (minced)
  • 1 tablespoon Ginger (grated)
  • 3 tablespoons Soy sauce
  • 2 tablespoons Fish sauce
  • 2 tablespoons Brown sugar
  • 2 tablespoons Lime juice (freshly squeezed)
  • 1 tablespoon Sriracha or Thai chili sauce
  • 1 cup Coconut milk
  • 2 tablespoons Cilantro (chopped, plus extra for garnish)
  • 1 tablespoon Vegetable oil (for grilling)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

In a large mixing bowl, combine garlic, ginger, soy sauce, fish sauce, brown sugar, lime juice, Sriracha, coconut milk, chopped cilantro, salt, and pepper. Mix well to create the marinade.

Step 2

Place the chicken thighs in the bowl and ensure they are evenly coated with the marinade. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Step 3

Preheat your grill to medium-high heat. Lightly oil the grill grates with vegetable oil to prevent sticking.

Step 4

Remove the chicken from the marinade, allowing any excess marinade to drip off. Reserve the marinade for later use.

Step 5

Place the chicken thighs on the grill and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through with a nice char on the outside.

Step 6

While the chicken is grilling, pour the reserved marinade into a small saucepan and bring it to a boil over medium heat. Reduce the heat and simmer for 3-4 minutes. This will serve as a dipping sauce.

Step 7

Once the chicken is cooked, remove it from the grill and let it rest for 5 minutes.

Step 8

Garnish the grilled chicken with extra chopped cilantro and serve with the dipping sauce on the side. Pair with steamed jasmine rice or a fresh Thai salad for a complete meal.
