Ingredients

  • 1 lb Ground chicken or turkey
  • 0.5 cup Panko breadcrumbs
  • 0.25 cup Cilantro, chopped
  • 2 stalks Green onion, finely sliced
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 2 tablespoons Soy sauce
  • 1 teaspoon Fish sauce
  • 1 tablespoon Thai red curry paste
  • 1 whole Lime, zested and juiced
  • 0.25 cup Peanut butter
  • 2 tablespoons Coconut milk
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Brown sugar
  • 4 whole Burger buns
  • 0.5 cup Cucumber slices
  • 0.5 cup Carrot, shredded
  • 4 whole Lettuce leaves
  • 1 tablespoon Vegetable oil

Directions

Step 1

In a large mixing bowl, combine ground chicken or turkey, panko breadcrumbs, chopped cilantro, sliced green onion, minced garlic, grated ginger, soy sauce, fish sauce, Thai red curry paste, and the zest of one lime. Mix until thoroughly combined.

Step 2

Divide the mixture into four equal portions and shape them into burger patties. Make a slight indent in the center of each patty to ensure even cooking.

Step 3

Heat vegetable oil in a non-stick skillet or grill over medium-high heat. Cook the patties for about 4-5 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C).

Step 4

While the patties cook, prepare the peanut sauce by whisking together peanut butter, coconut milk, lime juice, rice vinegar, and brown sugar in a small bowl until smooth. Adjust seasoning to taste.

Step 5

Toast the burger buns lightly on the skillet or grill to add texture and warmth.

Step 6

Assemble the burgers: Spread a generous layer of peanut sauce on the bottom half of each bun. Place a lettuce leaf, followed by a cooked patty, cucumber slices, shredded carrot, and the top half of the bun.

Step 7

Serve immediately and enjoy your Thai Burgers with extra peanut sauce on the side!
