Ingredients

  • 6 cups Apples (peeled, cored, and diced)
  • 4 cups Granulated sugar
  • 1 cup Brown sugar
  • 3 tablespoons Unsalted butter
  • 1.5 teaspoons Ground cinnamon
  • 0.5 teaspoons Ground nutmeg
  • 0.25 teaspoons Ground allspice
  • 2 tablespoons Lemon juice
  • 3 ounces Liquid pectin
  • 1 teaspoon Vanilla extract

Directions

Step 1

Peel, core, and dice the apples into small cubes. You will need 6 cups of diced apples.

Step 2

In a large pot, combine the apples, granulated sugar, brown sugar, ground cinnamon, ground nutmeg, and ground allspice.

Step 3

Place the pot over medium heat and stir until the sugars dissolve and the apples start to release their juices, about 5-7 minutes.

Step 4

Add the butter and lemon juice to the pot and continue to stir as the mixture begins to bubble gently.

Step 5

Reduce the heat to low and let the mixture simmer for about 15 minutes, stirring occasionally, until the apples are soft and fragrant.

Step 6

Using an immersion blender, pulse the mixture lightly to achieve a slightly chunky texture. Alternatively, you can mash the apples with a potato masher.

Step 7

Increase the heat back to medium and stir in the liquid pectin. Bring the mixture to a boil and let it cook for 1-2 minutes while stirring constantly.

Step 8

Remove the pot from the heat and stir in the vanilla extract.

Step 9

Carefully ladle the hot jam into sterilized jars, leaving about 1/4 inch of headspace at the top of each jar.

Step 10

Seal the jars with lids and process them in a hot water bath for 10 minutes (adjusting for altitude if necessary).

Step 11

Let the jars cool completely at room temperature. Check the seals before storing. Properly sealed jars can be stored in a cool, dark place for up to a year.

Step 12

Refrigerate any opened jars and consume within 2-3 weeks.
