  • 15 ounces black beans, cooked or canned (drained and rinsed)
  • 0.5 cups dried apricots, chopped
  • 1 large carrot, thinly sliced
  • 1 medium red bell pepper, diced
  • 1 medium zucchini, diced
  • 2 tablespoons fresh cilantro, chopped
  • 1 medium lemon, juiced
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 cups cooked couscous (for serving)

Directions

Step 1

Heat the olive oil in a large heavy-bottomed pot or tagine over medium heat.
