Ingredients

  • 2 large steaks (about 1.5 inches thick) Ribeye steak
  • 2 tablespoons Olive oil
  • 1 teaspoon Kosher salt
  • 1 teaspoon Freshly ground black pepper
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Cayenne pepper
  • 2 tablespoons Unsalted butter
  • 2 sprigs Fresh rosemary
  • 2 sprigs Fresh thyme

Directions

Step 1

Remove the ribeye steaks from the refrigerator and let them sit at room temperature for 30 minutes. This ensures even cooking.

Step 2

In a small bowl, mix together the kosher salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper to create the seasoning blend.

Step 3

Pat the steaks dry with paper towels and rub them with olive oil on both sides.

Step 4

Generously season both sides of the steaks with the seasoning blend, pressing it into the meat with your hands.

Step 5

Heat a cast-iron skillet or grill pan over high heat until it is very hot. (You can also use an outdoor grill for this recipe.)

Step 6

Add the steaks to the hot pan and sear for 3-4 minutes on the first side without moving them, to create a nice crust.

Step 7

Flip the steaks and sear for another 3-4 minutes. Reduce the heat to medium if the steak browns too quickly.

Step 8

Add the butter, rosemary, and thyme to the pan. Tilt the pan slightly and use a spoon to baste the steaks with the melted butter and herbs for an additional 1-2 minutes.

Step 9

Check the internal temperature of the steaks using a meat thermometer. For medium-rare, aim for 130°F (54°C); for medium, 135°F (57°C). Adjust cooking time as needed.

Step 10

Remove the steaks from the pan and let them rest on a cutting board, loosely covered with aluminum foil, for 5-10 minutes to retain their juices.

Step 11

Slice the steaks thinly against the grain for maximum tenderness. Serve immediately with your favorite sides, such as coleslaw, cornbread, or roasted vegetables.
