  • 15 oz kidney beans (canned, drained and rinsed)
  • 1 cup corn kernels (canned or frozen)
  • 2 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tbsp chili powder
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh cilantro, chopped (optional garnish)

Directions

Step 1

Heat 2 tablespoons of olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Season the beef stew meat with salt and black pepper, then sear it in batches until browned on all sides. Remove the beef from the pot and set it aside.

Step 3

In the same pot, add the diced onion and sauté for about 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.
