Ingredients

  • 8 oz Cream cheese
  • 1 cup Sour cream
  • 1 cup Shredded cheddar cheese
  • 1 can Rotel diced tomatoes and green chilies (drained)
  • 1 lb Ground beef (or ground turkey)
  • 1 packet Taco seasoning
  • 2 Green onions (sliced)
  • 2 tbsp Cilantro (chopped, optional)
  • 0 Tortilla chips (for serving)

Directions

Step 1

In a medium skillet over medium heat, cook the ground beef until fully browned, breaking it up into small crumbles as it cooks.

Step 2

Drain any excess grease from the skillet, then stir in the taco seasoning along with 1/4 cup of water. Cook for an additional 2 minutes, stirring occasionally, until the seasoning is well incorporated. Remove from heat and set aside.

Step 3

In a large microwave-safe mixing bowl, combine the cream cheese and sour cream. Microwave on high for 1 minute or until softened, then mix until smooth and creamy.

Step 4

Stir the Rotel diced tomatoes and green chilies into the cream cheese mixture, followed by the cooked ground beef and 3/4 cup of shredded cheddar cheese. Mix thoroughly.

Step 5

Transfer the mixture to a serving dish or a shallow baking dish. Sprinkle the remaining 1/4 cup of shredded cheddar cheese evenly over the top.

Step 6

Microwave the dish for 2-3 minutes, or bake in a 350°F oven for 10 minutes, until the cheese on top is melted and bubbly.

Step 7

Garnish with sliced green onions and chopped cilantro if desired.

Step 8

Serve warm with tortilla chips or vegetable sticks for dipping. Enjoy!
