Ingredients

  • 4 large yellow onions
  • 4 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1.5 cups whole milk
  • 0.5 cup sour cream
  • 2 cups shredded sharp cheddar cheese
  • 1.5 cups crushed Ritz crackers
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.

Step 2

Peel and thinly slice the yellow onions into rings.

Step 3

In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Add the onions and sauté for 15-20 minutes, stirring occasionally, until the onions are golden and caramelized. Stir in the dried thyme and set aside.

Step 4

In a medium saucepan, melt the remaining 2 tablespoons of butter over medium heat. Whisk in the flour and cook for 1 minute until lightly golden. Gradually pour in the milk, whisking constantly to create a smooth sauce. Cook for 2-3 minutes until thickened.

Step 5

Reduce the heat to low and stir in the sour cream and 1 cup of shredded cheddar cheese. Mix until the cheese is melted and the sauce is smooth. Add the salt, black pepper, and garlic powder, and mix well.

Step 6

In the prepared baking dish, spread half of the caramelized onions in an even layer. Pour half of the cheese sauce over the onions, then repeat with the remaining onions and cheese sauce.

Step 7

In a separate bowl, combine the crushed Ritz crackers and the remaining 1 cup of cheddar cheese. Sprinkle the mixture evenly over the casserole.

Step 8

Bake in the preheated oven for 20 minutes, or until the top is golden and bubbly.

Step 9

Allow the casserole to rest for 5 minutes before serving. Enjoy as a side dish or pair it with your favorite protein for a delicious meal.
