Ingredients

  • 2 lbs Ground beef (80% lean)
  • 0.5 lbs Ground pork
  • 1 medium Yellow onion, finely diced
  • 1 medium Green bell pepper, finely diced
  • 3 cloves Garlic, minced
  • 1 cup Panko breadcrumbs
  • 0.5 cups Milk
  • 2 pieces Large eggs
  • 1 cup Barbecue sauce
  • 2 tbsp Worcestershire sauce
  • 1 tsp Chili powder
  • 1 tsp Smoked paprika
  • 0.5 tsp Ground cumin
  • 1 tsp Salt
  • 0.5 tsp Black pepper, freshly ground
  • 2 tbsp Brown sugar
  • 0.5 cups Ketchup
  • 1 tsp Hot sauce (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

Step 2

In a small bowl, combine the panko breadcrumbs and milk. Let the breadcrumbs soak while you prepare the other ingredients.

Step 3

In a large mixing bowl, combine the ground beef, ground pork, diced onion, diced green bell pepper, and minced garlic.

Step 4

Add the soaked breadcrumbs, eggs, 1/2 cup of barbecue sauce, Worcestershire sauce, chili powder, smoked paprika, cumin, salt, and black pepper to the meat mixture.

Step 5

Using clean hands, gently mix all the ingredients together until just combined. Be careful not to overmix, as this can make the meatloaf dense.

Step 6

Shape the mixture into a loaf on the prepared baking sheet, or press it into the loaf pan if using.

Step 7

In a small bowl, combine the remaining 1/2 cup of barbecue sauce, brown sugar, ketchup, and hot sauce (if using). Mix until smooth.

Step 8

Spread half of the glaze evenly over the top of the meatloaf, reserving the rest for later.

Step 9

Bake the meatloaf in the preheated oven for 60 minutes. Remove it from the oven and spread the remaining glaze over the top.

Step 10

Return the meatloaf to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).

Step 11

Let the meatloaf rest for 10 minutes before slicing. Serve with your favorite sides such as mashed potatoes, green beans, or cornbread.
