Ingredients

  • 2 pieces Chicken breasts
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 medium Green bell pepper
  • 1 medium Red bell pepper
  • 1 medium Yellow onion
  • 4 large Flour tortillas
  • 2 cups Shredded cheddar cheese
  • 2 cups Shredded Monterey Jack cheese
  • 2 tablespoons Butter
  • 0.5 cup Sour cream
  • 0.5 cup Salsa
  • 2 tablespoons Fresh cilantro

Directions

Step 1

Cut the chicken breasts into bite-sized pieces.

Step 2

In a small bowl, mix together the chili powder, cumin, paprika, garlic powder, salt, and black pepper to create a seasoning blend.

Rub the seasoning blend over the chicken pieces until evenly coated.

Step 4

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the chicken for 5-6 minutes, or until fully cooked and no longer pink. Transfer to a plate and set aside.

Thinly slice the green bell pepper, red bell pepper, and yellow onion.

Cut each quesadilla into wedges and garnish with fresh cilantro.
