Ingredients

  • 6 large Russet potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 pounds Ground beef
  • 1 tablespoon Taco seasoning
  • 0.5 cups Black beans
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Sour cream
  • 0.5 cup Salsa
  • 2 stalks Green onions
  • 1 small Jalapeños (optional)
  • 2 tablespoons Cilantro (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C). Scrub the potatoes thoroughly and pat them dry.

Step 2

Poke several holes into the potatoes using a fork, then rub them with olive oil and sprinkle with half of the salt.

Step 3

Place the potatoes directly on the oven rack and bake for 50-60 minutes, or until they are fork-tender. Allow them to cool for 10 minutes.

While the potatoes cook, heat a skillet over medium heat and brown the ground beef. Stir in the taco seasoning and cook according to the package instructions. Set aside.
