Ingredients

  • 4 pieces corn tortillas
  • 6 large eggs
  • 2 tablespoons milk
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 0.5 medium, diced onion
  • 1 small, diced (optional) jalapeño pepper
  • 1 medium, diced tomato
  • 1 cup shredded cheddar cheese
  • 2 tablespoons, chopped cilantro
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 2 teaspoons (optional) hot sauce

Directions

Step 1

Cut the corn tortillas into small strips or triangles, roughly 1 inch in size.

Step 2

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the tortilla pieces and cook until they are crispy and golden brown, stirring occasionally. Remove them from the skillet and set aside.

Step 3

In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.

Step 4

In the same skillet, melt 1 tablespoon of butter over medium heat. Add the diced onion and jalapeño (if using), and sauté for 2-3 minutes until the onion is translucent and fragrant.

Step 5

Stir in the diced tomato, cooking for another 1-2 minutes until slightly softened.

Step 6

Pour the egg mixture into the skillet with the vegetables. Let it cook for 30 seconds undisturbed, then gently scramble with a spatula, folding the eggs as they cook.

Step 7

When the eggs are halfway cooked, add the crispy tortilla strips back into the skillet and gently fold them into the eggs.

Step 8

Continue to cook until the eggs are just set but still soft. Turn off the heat and sprinkle shredded cheddar cheese on top. Cover the skillet briefly to allow the cheese to melt.

Step 9

Garnish with fresh cilantro and an optional drizzle of hot sauce. Serve immediately with extra toppings such as avocado slices, salsa, or sour cream if desired.
