Ingredients

  • 1 can (15 oz) black beans, canned
  • 1 can (15 oz) pinto beans, canned
  • 1 can (15 oz) kidney beans, canned
  • 1 can (15 oz) sweet corn, canned
  • 1 large red bell pepper, diced
  • 1 large green bell pepper, diced
  • 0.5 medium red onion, finely chopped
  • 0.5 cup cilantro, chopped
  • 1 small jalapeño, finely diced (optional)
  • 0.25 cup olive oil
  • 2 medium lime, juiced
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon smoked paprika
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon (or to taste) black pepper

Directions

Step 1

Drain and rinse the black beans, pinto beans, kidney beans, and sweet corn. Place them in a large mixing bowl.

Step 2

Dice the red bell pepper and green bell pepper into small, uniform pieces. Add them to the mixing bowl.

Step 3

Finely chop the red onion and cilantro. Add these to the bowl as well.

Step 4

If using, finely dice the jalapeño, removing seeds for less heat if preferred, and stir it into the salad.

Step 5

In a small bowl or jar, whisk together the olive oil, lime juice, apple cider vinegar, honey, ground cumin, chili powder, smoked paprika, salt, and black pepper until fully combined.

Step 6

Pour the dressing over the bean and vegetable mixture. Toss everything together until the ingredients are evenly coated with the dressing.

Step 7

Cover the salad and let it marinate in the refrigerator for at least 30 minutes to allow the flavors to meld. For best results, marinate for 2-3 hours.

Step 8

Before serving, give the salad a quick toss and adjust seasoning with additional salt, lime juice, or spices if needed.

Step 9

Serve chilled as a side dish, dip with tortilla chips, or enjoy as a light main meal!
