  • 1 lb ground beef

  • 1 cup frozen corn kernels
  • 2 cups red enchilada sauce
  • 6 pieces flour tortillas (8-inch)
  • 3 cups shredded Mexican cheese blend
  • 0.5 cup sliced black olives (optional)
  • 2 stalks green onions, sliced (optional for garnish)
  • 0.5 cup sour cream (optional for serving)
  • 2 tbsp fresh cilantro, chopped (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set it aside.

In a large skillet over medium-high heat, cook the ground beef until browned, breaking it up with a spoon as it cooks. Drain excess grease if necessary.
