Ingredients

  • 12 pieces large eggs
  • 1 piece ripe avocado
  • 2 tablespoons mayonnaise
  • 1 tablespoon lime juice
  • 1 piece jalapeño pepper, finely chopped (optional)
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped (optional, for garnish)

Directions

Step 1

Place the eggs in a large saucepan and cover them with water. Bring the water to a boil over high heat.

Once the water reaches a full boil, turn off the heat, cover the saucepan with a lid, and let the eggs sit in the hot water for 10 minutes.

After 10 minutes, transfer the eggs to a bowl of ice water to cool for 5 minutes. This will make them easier to peel.

Once cooled, peel the eggs and slice them in half lengthwise. Gently remove the yolks and place them in a mixing bowl.
