Ingredients

  • 4 pieces Boneless, skinless chicken breasts

  • 1 15-oz can Black beans, drained and rinsed
  • 1 15-oz can Corn kernels, drained
  • 1 10-oz can Diced tomatoes with green chilies, undrained
  • 2 cups Cooked white or brown rice
  • 2 cups Shredded cheddar cheese
  • 2 tablespoons Chopped fresh cilantro
  • 4 pieces Lime wedges

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with nonstick cooking spray or olive oil and set aside.

Rub the chicken breasts with olive oil, garlic powder, chili powder, cumin, smoked paprika, and salt until evenly coated.
