Ingredients

  • 1 pound Ground beef
  • 1 tablespoon Olive oil
  • 1 medium Onion (diced)
  • 3 Garlic cloves (minced)
  • 2 tablespoons Taco seasoning
  • 1 cup Canned black beans (drained and rinsed)
  • 2 cups Cooked white rice
  • 0.5 cup Salsa
  • 1 cup Shredded cheddar cheese
  • 6 Large flour tortillas
  • 1 cup Romaine lettuce (shredded)
  • 1 cup Diced tomatoes
  • 0.5 cup Sour cream
  • 2 tablespoons Fresh cilantro (chopped, optional)

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Add the diced onion and sauté until softened, about 3 minutes.

Stir in the minced garlic and cook for another 30 seconds until fragrant.
