Ingredients

  • 8 pieces Flour tortillas
  • 500 grams Ground beef
  • 1 medium, chopped Onion
  • 2 cloves, minced Garlic
  • 1 medium, diced Red bell pepper
  • 2 tablespoons Taco seasoning
  • 240 grams, canned and drained Black beans
  • 150 grams, canned and drained Corn kernels
  • 150 grams Shredded cheddar cheese
  • 120 grams Sour cream
  • 2 tablespoons Chopped cilantro
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and minced garlic and sauté until the onion is translucent, about 3 minutes.

Add the ground beef to the skillet. Cook and stir until the beef is browned and cooked through, about 5 to 7 minutes.

Stir in the red bell pepper and continue to cook for another 2 minutes.

Mix in the taco seasoning, black beans, corn kernels, salt, and black pepper. Cook together for 3 to 4 minutes until well combined and heated through. Remove from heat.

Take one flour tortilla and spread a small amount of sour cream across the whole from edge to edge. Spoon about 1/8 of the beef mixture onto the center of the tortilla in a line.
