Ingredients

  • 500 g Plain flour
  • 125 g Cold butter, cubed
  • 125 g Cold lard, cubed
  • 150 ml Cold water
  • 450 g Beef skirt, diced
  • 300 g Potato, finely diced
  • 175 g Swede (rutabaga), finely diced
  • 150 g Onion, finely chopped
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 Egg, beaten (for glazing)

Directions

Step 1

In a large mixing bowl, combine the plain flour, cold butter, and lard. Use your fingertips to rub the fats into the flour until the mixture resembles breadcrumbs.

Step 2

Gradually add cold water, a tablespoon at a time, and mix until the dough comes together. Form the dough into a ball, wrap in cling film, and chill in the fridge for 30 minutes.

Step 3

While the pastry chills, prepare the filling. In a large bowl, mix the diced beef skirt, potato, swede, and onion. Season with salt and black pepper, ensuring everything is evenly coated.

Step 4

Preheat the oven to 200°C (180°C fan)/400°F/gas mark 6. Line a baking tray with parchment paper.

On a lightly floured surface, divide the dough into four equal portions. Roll each portion out into a circle approximately 20cm in diameter.
