Ingredients

  • 1 lb Boneless, skinless chicken breasts
  • 0.5 cup Soy sauce
  • 3 tbsp Brown sugar
  • 2 tbsp Honey
  • 1 tbsp Rice vinegar
  • 1 tsp Sesame oil
  • 3 cloves Garlic, minced
  • 1 tsp Fresh ginger, grated
  • 1 tbsp Cornstarch
  • 1 tbsp Water
  • 2 cups Broccoli florets
  • 1 cup Carrots, sliced into thin rounds
  • 1 cup Bell peppers, sliced
  • 1 cup Snow peas
  • 2 tbsp Vegetable oil
  • 1 tbsp Sesame seeds
  • 3 cups Cooked rice (for serving)

Directions

Step 1

Dice the chicken breasts into bite-sized pieces and set aside.

Step 2

In a small bowl, whisk together soy sauce, brown sugar, honey, rice vinegar, sesame oil, minced garlic, grated ginger, cornstarch, and water until smooth. This is the teriyaki sauce.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Step 4

Add the diced chicken to the skillet, season with a pinch of salt and pepper, and cook for 5-6 minutes or until the chicken is golden brown and fully cooked. Remove the chicken from the skillet and set aside.

Step 5

In the same skillet, heat the remaining 1 tablespoon of vegetable oil and add the broccoli, carrots, bell peppers, and snow peas.

Step 6

Stir fry the vegetables for 4-5 minutes until they are crisp-tender.

Step 7

Return the cooked chicken to the skillet with the vegetables.

Step 8

Pour the teriyaki sauce over the chicken and vegetables, stirring well to evenly coat everything. Let the sauce simmer for 2-3 minutes until it thickens.

Step 9

Remove the skillet from heat and garnish with sesame seeds.

Step 10

Serve the teriyaki chicken stir fry over bowls of cooked rice and enjoy!
