Ingredients

  • 1.5 pounds Boneless skinless chicken breasts
  • 0.5 cups Soy sauce
  • 0.25 cups Brown sugar
  • 2 tablespoons Honey
  • 2 cloves Garlic cloves, minced
  • 1 teaspoon Ginger, grated
  • 1 tablespoon Sesame oil
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water
  • 2 medium Bell peppers (any color), cut into 1-inch pieces
  • 1 large Red onion, cut into 1-inch pieces
  • 1 cup Pineapple chunks (optional)
  • 8 pieces Wooden or metal skewers
  • 1 sufficient Cooking spray or oil

Directions

Step 1

Cut the chicken breasts into 1-inch cubes and set aside in a large bowl.

Step 2

In a medium mixing bowl, whisk together soy sauce, brown sugar, honey, minced garlic, grated ginger, and sesame oil to create the teriyaki marinade.

Step 3

Pour half of the marinade over the chicken cubes, reserving the other half for basting and glaze. Cover and marinate the chicken in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

Step 4

If using wooden skewers, soak them in water for 20-30 minutes to prevent burning on the grill.

Step 5

In a small saucepan, combine the reserved marinade with cornstarch and water. Cook over medium heat, stirring constantly, until the glaze begins to thicken. Remove from heat and set aside.

Step 6

Thread the marinated chicken cubes onto the skewers, alternating with bell pepper pieces, red onion chunks, and pineapple (if using).

Step 7

Preheat an outdoor grill or grill pan over medium-high heat. Lightly oil the grill grates or spray with cooking spray to prevent sticking.

Step 8

Place the kabobs on the grill and cook for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. Brush the skewers with the prepared teriyaki glaze during the last few minutes of cooking.

Step 9

Remove the kabobs from the grill and let them rest for a couple of minutes. Serve hot with a drizzle of extra glaze, if desired.
