Ingredients

  • 2 cups (diced) Fresh pineapple
  • 1 medium (diced) Roma tomato
  • 0.5 cup (finely diced) Red onion
  • 1 small (minced, seeds removed for less heat) Jalapeño
  • 0.25 cup (chopped) Cilantro
  • 2 tablespoons Tequila
  • 2 tablespoons Fresh lime juice
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Prepare the pineapple by peeling and dicing it into small cubes. Measure out 2 cups and place them into a large mixing bowl.

Step 2

Dice the Roma tomato into small cubes and add it to the bowl with the pineapple.

Step 3

Finely dice half a red onion and mince one small jalapeño (remove seeds for less heat if desired). Add both to the mixing bowl.

Step 4

Chop the cilantro and measure out 1/4 cup. Add it to the bowl with the other ingredients.

Step 5

In a small separate bowl, whisk together the tequila, fresh lime juice, honey, salt, and black pepper until the honey dissolves completely.

Step 6

Pour the tequila-lime mixture over the salsa ingredients in the large bowl. Gently toss everything together until evenly combined.

Step 7

Taste the salsa and adjust the seasoning with additional salt or lime juice if desired.

Step 8

Cover the salsa and refrigerate for at least 15 minutes to allow the flavors to meld.

Step 9

Serve chilled or at room temperature with tortilla chips, or use as a topping for tacos, grilled chicken, fish, or pork.
