Ingredients

  • 2 pieces Chicken breasts
  • 0.25 cups Tequila
  • 2 tablespoons Lime juice
  • 2 tablespoons Olive oil
  • 4 cloves Garlic
  • 0.5 teaspoons Red chili flakes
  • 1 cup Heavy cream
  • 0.5 cups Chicken broth
  • 12 ounces Linguine pasta
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh cilantro
  • 0.25 cups Parmesan cheese

Directions

Step 1

Pound the chicken breasts to an even thickness and season both sides with salt and black pepper.

Step 2

In a shallow dish, combine tequila, lime juice, and 1 tablespoon of olive oil. Add the chicken and let it marinate for 15 minutes, turning occasionally.

Step 3

While the chicken marinates, cook the linguine according to package instructions. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 4

Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Remove chicken from marinade and cook in the skillet for 4-5 minutes per side, or until fully cooked. Transfer to a plate and cover with foil to keep warm.

Step 5

Lower the heat to medium and add minced garlic and red chili flakes to the skillet. Sauté for 30 seconds until fragrant.

Step 6

Deglaze the skillet by adding chicken broth, scraping up any browned bits from the bottom of the pan.

Step 7

Stir in the heavy cream and allow the sauce to simmer for 4-5 minutes, or until slightly thickened.

Step 8

Add the cooked linguine to the skillet, tossing to coat the pasta in the sauce. If the sauce is too thick, use the reserved pasta water to loosen it.

Step 9

Slice the cooked chicken into thin strips and arrange it over the linguine.

Step 10

Garnish with chopped fresh cilantro and grated Parmesan cheese before serving.
